Cantina Miotto is a family-run winery in Colbertaldo di Vidor, Treviso, Veneto, Italy, specializing in traditional, low-intervention Prosecco from the Conegliano-Valdobbiadene area. The ProFondo Colfondo Agricolo is an ancestral-method (col fondo) frizzante made from Glera grapes, refermented in bottle without disgorging to retain lees for added texture, complexity, and natural cloudiness. This "agricolo" (farm-direct) version is bone-dry, savory, and slightly bitter - far from commercial Prosecco stereotypes - with rustic charm and excellent table versatility.
Pour gently to avoid sediment or shake for full lees integration; ideal with antipasti, fried foods, charcuterie, pizza, or hearty pasta.
