From Kate Hill’s Four Winds Estate in Tasmania’s ultra-cool Huon Valley (42nd parallel south, 60 m elevation), this single-vineyard Pinot Noir is drawn from a tiny 1.25-hectare late-planted block. Hand-sorted, whole-berry destemmed fruit underwent ambient yeast fermentation in French oak, was pressed dry, and aged 10 months on lees in French oak. Only 150 dozen were made. Delicate yet precise cool-climate Pinot with purity and finesse — ideal with duck, salmon, mushroom dishes, or soft cheeses.
